Homemade Citrus Tea with Ginger (V, Ve, GF)



This is such an ingenious way of making fruit tea at home.  My boyfriend tries to stay away from caffeine as much as possible, and we didn't have any herbal teas in the cupboard so I decided to make this zingy alternative for us both to enjoy.  As a singer I'm always drinking honey and lemon to soothe my voice when it feels rough, but with the added benefits of ginger, it's great for your stomach as well. A zingy summery alternative to squash, cordial and coffee.

One cafetière

1 lemon
1 lime
1/2 thumb of ginger diced or about 2 dessert spoons of the frozen chopped ginger

(honey to serve)

Stick the fruit and ginger in a cafetière and fill to the top with boiling water, leave to stew for 5 - 8 minutes. Stick the plunger in and press down on the fruit.

Serve as it is or add a small squeeze of honey to take the edge off
