Roasted Roots with Apple and Thyme (V, Ve, GF)
Okay, so no bowl in sight here, but what's a plate between friends?
With these ingredients, you're 40 minutes away from a really delicious sweet and savoury meal.
Serves 4
4 cooked beetroot
2 carrots
4 parsnips
2 apples
16 new potatoes (approx 4 portions)
400g green beans (approx 4 portions)
1 tsp thyme
1 tblsp olive oil
roasted tomato hummous (shop bought)
balsamic vinegar to serve
Pre heat the oven to 200C
Peel and chop the veg into chunky pieces of approximately the same size, and peel and quarter the apples removing the cores.
Put the veg and apple in an oven tray and add the olive oil and thyme. Bake in the oven for 30-40 minutes until cooked through and browning.
Boil the green beans for 5 minutes so they still retain some crunch, you can also steam them if you have a steamer, this takes a little longer but they will retain more of their nutrients.
Serve with roasted tomato hummous (shop bought for the ease of it) and some balsamic vinegar
